Vegan Herbal Healing Broth

Equipment

  • 1 Large pot
  • 1 Large sieve

Ingredients

  • 2 onions (quartered)
  • 2 cloves garlic
  • 2 carrots (roughly chopped)
  • 1 corn (chopped into 3 parts)
  • 6-8 dried Shiitake mushrooms
  • 2 shoots Spring onions
  • 4 fresh Bay leaves
  • 2-3 fresh Sage leaves
  • 3 chunks Broccoli
  • 2-3 sprigs fresh Thyme
  • 4 stalks Celery (chopped)
  • 10 cm length Ginger rhizome sliced in half
  • 1/2 tsp Turmeric powder or use fresh Turmeric, 10cm length
  • 1 cup Medicinal Herbs (Astragalus, Dan Shen, Cordyceps, Goji berry, Longan berry, Snow Fungus, Lotus seed, Fox Nut, Chinese Yam) (dried)
  • 2.5 L water

Instructions

  • Combine all ingredients in a large pot.
  • Pour on water, bring to boil and then simmer for 1 hour.
  • Strain and store in fridge for up to 2 days or freeze for future use.
